The Delicious Challenge

It’s December.  For some of us, it’s cold, wet, and rainy with only a chance of snow.  In keeping with the spirit of posts about warm drinks,  I challenge you to make your own hot chocolate.  Mmmmm.  Think of how it would warm your work-weary soul at the end of the day.  The next time you’re at the grocery store, grab the few ingredients you might not have (personally, I don’t keep cinnamon sticks around) and round up a few people to share your delicious drink with. Or if you’re flying solo, enjoy your creation with a good book.

White Hot Chocolate

Makes 5 servings

Ingredients:  3 cups half-and-half or light cream
2/3 cup white baking pieces or chopped white chocolate baking squares
1 3-inch piece stick cinnamon
1/8 teaspoon ground nutmeg
1 teaspoon vanilla
1/4 teaspoon almond extract
Ground cinnamon (optional)

1.  In a medium saucepan, combine 1/4 cup of the half-and-half, the baking pieces, cinnamon, and nutmeg.
2.  Stir over low heat until baking pieces are melted.
3.  Add remaining half-and-half.
4.  Cook and stir until heated through. Remove from heat.
5.  Remove and discard cinnamon.
6.  Stir in vanilla and almond extract.
7.  If desired, sprinkle with ground cinnamon.

    Made! It tasted pretty good. But i think i like making my own chai tea lattes better. Just personal preference. Though that was pretty darn good!

    I recommend dark hot chocolate with amaretto in it. Use dark or regular ghiradelli cocoa, and use lots of it, with only a little sugar. Mix cinnamon with the cocoa and sugar, and after you add that to the milk, stir in a capful of amaretto (almond liquor). It’s wonderful.
